The department that gives its all

Huila is not only Colombia's largest coffee producer: it is a region where coffee growing permeates everything. Coffee is cultivated in 35 of its 37 municipalities, and three out of four people living in rural areas are dedicated to it. With more than 146,000 hectares in production, this department in southwestern Colombia combines altitude, diverse microclimates, and a deep-rooted coffee culture passed down from generation to generation. Pitalito, in the far south, concentrates some of the best farms in the region, located between 1,300 and 1,900 meters above sea level.

A cooperative with over 60 years of history

This lot is a selection of small producers from the municipality of Pitalito, all of whom are associated with Cadefihuila, a cooperative that has been working with coffee growers in Huila for over six decades. Today, it brings together more than 3,500 producers spread across 28 municipalities. Most cultivate small family farms, which allows for very careful control of each stage: from the selective harvesting of the cherry to processing and drying.

The cooperative supports this work with a solid infrastructure: more than 45 purchasing points close to the production areas, permanent and mobile cupping labs, supply stores, and strategically located drying centers. All this ensures that the quality of the coffee is preserved from the moment it leaves the farm until it reaches our roaster. Additionally, Cadefihuila operates under internationally recognized schemes such as Fairtrade, Rainforest Alliance, 4C, and C.A.F.E. Practices.

What you find in the cup

Natural processing gives this coffee its most expressive character. The fragrance is enzymatic and fruity, with a chocolate base and stone fruit notes reminiscent of ripe peach. On the palate, it has a medium-high body, balanced acidity, and a slightly exotic profile that makes it equally interesting as a filter coffee or espresso. The SCA score of 87.25 confirms what is already hinted at in the aroma: this is a coffee that tells a story.
